Æbleskivers (Danish Pancake Balls)
Serves: 4–6

Cook Time: 10 minutes
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 tablespoons sugar
- 2 large eggs, separated
- 2 cups buttermilk
- 4 tablespoons melted butter (plus more for cooking)
- Optional: cinnamon sugar, syrups, or jams for serving
Directions
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
- In another bowl, whisk egg yolks, buttermilk, and melted butter. Stir wet ingredients into the dry mixture until combined.
- In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter.
- Heat an æbleskiver pan over medium heat and lightly butter each well.
- Pour batter into each well, filling about three-quarters full. Cook until the edges start to set, then use a skewer or knitting needle to turn the pancake ball so it cooks evenly on all sides.
- Remove when golden and fluffy. Serve warm with cinnamon sugar, syrups, or jams.
Hostess Note
Æbleskivers connect me deeply to my Danish roots and to my grandpa Larry. He made them for us grandchildren, and they were always such a treat. This summer, I had the joy of hosting my cousin Jake and his family, and we carried on this delicious tradition together. The pan itself feels like a little piece of family history, bringing warmth, nostalgia, and sweetness to the table.
