Cajun Shrimp Pasta

Ingredients
- 1 lb linguini or fettuccini
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic, minced
- Fresh chopped parsley to sauté
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 2 tbsp Cajun seasoning (more to taste)
- ½ tsp red pepper flakes (optional)
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)

- Cook pasta according to package instructions. Reserve a small amount of the pasta water before draining.
- In a large skillet, heat olive oil and a small pat of butter. Sauté garlic, parsley, and onion (if desired) until softened.
- Add shrimp to the pan and sauté until pink. Remove and set aside.
- Add cream, parmesan, Cajun seasoning, and red pepper flakes to the skillet. Simmer 3–4 minutes until sauce thickens slightly.
- Toss pasta into the sauce, adding reserved pasta water as needed for creaminess. Return shrimp to the pan and combine everything well.
- Season with salt, pepper, and more Cajun seasoning if desired. Garnish with fresh parsley before serving.

This recipe is a favorite of my husband and son. The sauce is so flavorful that my husband says he could eat it like soup straight from the pan. It’s hearty, spicy, and satisfying! He likes to sauté the shrimp first in garlic butter and Cajun spice with a squeeze of lemon—it gives the dish the perfect flavor boost. Bonus: This creamy Cajun sauce is also delicious over salmon!
