The Best Fresh Tomato Bruschetta

Fresh tomatoes, fragrant basil, lots of garlic, and warm toasted bread—this is summer on a plate.

There are some recipes that simply taste like summer, and this is one of them.

Every year, I look forward to the first ripe tomatoes from my garden. I especially love growing sweet cherry tomatoes, and I can never seem to plant enough basil. There's something so peaceful about watering it each morning, brushing my hands across the leaves, and catching that incredible fragrance. It never fails to make me smile.

When the tomatoes are ripe and the basil is overflowing, this bruschetta is one of the very first things I make. It's fresh, simple, full of garlic, and one of my favorite ways to enjoy the flavors of summer.

Ingredients

 Bruschetta 

- 5–6 Roma tomatoes, diced *(or about 3 cups of garden-fresh tomatoes—I love using my homegrown cherry tomatoes!)*
- 3–5 cloves garlic, finely minced
- ¼ cup fresh basil, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- ½ teaspoon sea salt
- Freshly ground black pepper
- Pinch of red pepper flakes *(optional)*

 For the Bread

- 1 French baguette
- Olive oil, for brushing
- 2 garlic cloves, peeled

 To Finish

- Balsamic glaze
- Fresh basil leaves, for garnish

Directions

1. In a medium bowl, combine the tomatoes, garlic, basil, olive oil, balsamic vinegar, sea salt, pepper, and the red pepper flakes, if using.
2. Let the mixture rest for at least **30 minutes** so the flavors have time to mingle.
3. Slice the baguette into ½-inch slices and brush each slice lightly with olive oil.
4. Toast until golden in the oven, on the grill, or under the broiler.
5. While the bread is still warm, rub each slice with a fresh garlic clove.
6. Spoon the tomato mixture generously over the toasted bread.
7. Finish with a generous drizzle of balsamic glaze and garnish with fresh basil.

Serve immediately while the bread is warm and crisp.

Marla's Hostess Tip

I always keep a bottle of balsamic glaze in my pantry. That final drizzle adds just the right touch of sweetness and makes even the simplest bruschetta feel a little extra special.
